(*) The standard DIN 10534 is met at this speed.
Remember that the quality of the wash depends on the speed of the appliance and the type of dirt to be washed.
Therefore, the wash speed should always be appropriate for the dirt on the dishes.
The quality of the dishwasher wash will depend on the wash speed (lower speed
higher quality wash), tank water temperature (55-65 ºC), correct detergent dose and
rinsing prior to inserting the dishes in the dishwasher.
28. DIN 10534 standard
The DIN 10534 standard is a summary of the DIN 10510, DIN 10511, DIN 10512 and DIN 10522 standards. It
specifies the hygiene requirements for the design, construction, and operation of commercial dishwashers (GSM) with
different designs, and offers special tips regarding the professional and hygienic operation, for cleaning and
disinfecting the washware and for the care and maintenance of the machines. The methods for testing the hygienic
operation are described. In addition to the principles for the correct spatial and operational arrangements within the
kitchen and for the proper and hygienic organisation of the Spülgutkreislaufes assembly. This standard is applied to
commercial dishwashers for cleaning washware used in contact with food including dishes, glassware, cutlery,
reusable boxes for transporting food and other similar items. Commercial dishwashers are used in kitchens found in
restaurants, canteens, hospitals and commercial establishments including bakeries, butchers, etc. Dishwashers for
domestic use, and for the reprocessing of medical devices in the sense of the Medical Device Regulation Act are
