Choice of suitable pans
Attention to correct choice and use of
pans
will help you obtain the best cooking
result most economically,
and generally avoid food boiling over
and sticking.
Pan bases
For maximum economy of electricity
when cooking or frying, only use pans
with a flat or very slightly concave base.
When hot the pan will rest evenly on the
hob. Modern saucepans for electric
cookers are the most suitable and effi-
cient for use on ceramic cooking zones,
or solid hotplates.
Size of pan
The diameter of the saucepan or frying
pan should be very slightly larger than
that of the hotplate/cooking area.
Pan lids
Cooking with the lid on the pan retains
the heat.
