Blueberry Lemon Muffins
Ingredients:
½ cup plain Greek yogurt
3 whole large eggs
Juice and zest of 1 lemon
¼ ounce honey or agave nectar
1 teaspoon vanilla extract
3 cups almond flour
1½ teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon sea salt
1 cup fresh blueberries
Directions:
1. Add yogurt, eggs, lemon juice, lemon zest, honey, and vanilla
to blender.
2. Set blender to 1, add our, baking powder, baking soda, and salt and blend
for about 1 minute until ingredients are well combined.
3. Remove batter from blender and fold in blueberries.
4. Transfer batter to prepared baking cups and bake in a 350°F oven
for 25 minutes.
5. Cool and enjoy.
