Deep fried Pork balls
Makes14to16balls
500gmincedpork
2tbspplainflour
2tbspcornflour
1tbspsoysauce
1tspgarlicsalt
1tspgroundblackpepper
1egg,lightlybeaten
1.Combineallingredientsinalargebowl,
mixthoroughly.Pickingupmixtureslap
against the side of the bowl until the mix
seemsmoreelasticorsticky.Thisshould
onlytakeafewslaps.
2.Shapemixtureinto4cmballs.
3. Heat oil to
settings8-10.Placeporkballs
inthebasket5-6atatime,cookfor
8-10minutesuntilgoldenbrown.
4. Drain. Serve with sweet and sour sauce
and fried or steamed rice if desired.
Calamari
500g Squid, washed and cleaned
½cupplainflour
1egg,lightlybeaten
1cupdriedbreadcrumbs
1.Removetheinsidesandheadofthesquid.
Wash and dry thoroughly.
2.Cutthesquidtubesinto1cmrings
3. Coat the squid pieces in flour, egg and
then breadcrumbs.
4.Heattheoiltosettings8-10andfrythe
squid until golden brown.
5. Drain and serve immediately with tartare
sauce and lemon wedges.
Tartare Sauce
250mlofgoodqualitymayonnaisewith
1tbspchoppedtarragonandparsley,a
½tbspofcapers
and1tbspofchopped
gerkins.Seasonwithsalt
and pepper to taste.

the sides of the wrapper around the filling,
leaving a small opening at the top.
4.Heattheoiltosettings8-10anddeepfry
about10atatime,untilgoldenbrown,
about 4-5 minutes.
5. Drain and serve with sweet and sour sauce
if desired.
