8 Cleaning and maintenance
The following materials must not be used for cleaning:
– High-pressure cleaner, steam jet
– Detergents containing chlorine or acid
– Cleaning sponges or wire brushes containing metal
– Abrasives or abrasive cleaning agents
8.1 Cleaning the warewasher during operation
Ø Remove and clean strainer drawer from inlet zone.
Ø Remove and clean all strainers.
8.2 Cleaning the warewasher at the end of the working day
Ø Remove grease filter from the inlet zone and wash in the warewasher.
Ø For warewashers with an exhaust air hood: Remove grease filter and wash in the warewasher.
Ø If present, remove grease filter from the heat pump and wash in the warewasher.
Ø Remove and clean strainer drawer from inlet zone.
