Understanding the Probes
Background Alto-Shaam Cook & Hold Ovens are capable of accommodating up to six (6)
separate probes depending on the model.
The probe in the #1 position is the probe that is used when cooking and holding
by probe. The probes in the other positions are used for gathering HACCP data.
