• Observe and instruct the user that the
grease collection tub must be removed
from the unit and the drain plug for the
grease drain must be closed before an
automatic steam generator cleaning,
an automatic cleaning or a cleaning
with the hand shower is performed.
Otherwise the entire water from the
steam generator or cleaning will end up
in the grease collection container. This
can cause the grease collection
container to overflow!
• Prepare the unit for grilling chickens as
follows:
– Open the drain plug →  for the
additional grease drain in the oven
floor.
– Slide the grease collecting tub → 
into the unit (not into the hanging
rack, but directly onto the oven
floor).
Attention: The drain for the
grease collection tub must be in
the middle over the grease drain
on the oven floor.
– Place the partitioning trays in the
oven →  .
– After preheating, load the filled
chicken grids →  .
11.5 Connection of a
communication interface
• All CONVOTHERM combi steamer
units are fitted with a RS232
communication interface.
To connect a PC by means of this
RS232, a special interface cable is
necessary.
• A separate communication module is
required to connect a CONVOTHERM
to a network. The communication
module is installed as follows:
Module A
– RS232 (connect with a standard 9-
pole connection)
– RS485
– USB interface
Module B
– RS232 (connect with a standard 9-
pole connection)
– RS485
– USB interface
– Ethernet
• Refer to the installation instructions for
the communication module in the
Service documents.
