5.6 Carrying out head and heart stunning
Head and heart stunning is carried out in two steps.
Generally, this stunning method results in better meat quality.
5.6.1 Stunning with stun tongs (pigs/sheep)

Apply the electrodes of the stun tong on both sides of the animal’s
head:
pig: preferably at the back ear base (Fig. 5-4, white point)
or
between eye and ear base.
sheep: between eye and ear of the sheep (Fig.5-5, white point).
This causes the current to flow through the brain in the shortest way.
Avoid bone fractures due to deeper probing with the stun tong on the
head of the slaughter animal.
The signal lamp “Step1” lights up red.
When the pre-set head current flow time has elapsed, a horn signal
sounds. The electric-stunner automatically switches to heart stunning
mode
.
The signal lamp “Step2” lights up red.
2. Immediately apply the electrodes of the stun tong onto the heart of
the animal lying on the ground:
1 electrode on the heart
1 electrode on the head
A horn signal sounds when the pre-set stun time has elapsed. The
stun process is now finished and the stun current is switched off.
3. Open the stun tong.
The stun machine switches back to the start of the program.
