13.4 Cleaning the pan
CAUTION
If the pan base is hot, cold cleaning water can heat up quickly and spray from the pan
You may scald yourself if you touch hot spraying water.
1. Leave the pan to cool down by itself. Do not try to cool it quickly using cold water or ice.
NOTICE
Reduction of the corrosion resistance of the pan due to inadequate cleaning
The high quality stainless steel of the pan surface forms a protective layer (called a chromium dioxide layer)
together with the oxygen from the air. Cleaning with a brush or sponge does not affect this protective layer, as
the oxygen from the air reconnects with the stainless steel and thus forms a new protective layer.
Contamination and moisture can prevent the formation of the protective layer and reduce the corrosion
resistance of the pan.
1. Clean the inside of the pan with lukewarm water and a sponge after each cooking process. Intermediate
cleaning is particularly necessary after use with food containing salt.
2. Remove any layers of dirt (salt, lime, fat, starch and protein layers) with a degreasing detergent or diluted
vinegar. Rinse thoroughly with clean water.
3. Remove stubborn dirt with a brush or sponge.
4. Do not use hydrochloric acid, sulphuric acid or other oxygen-reducing substances to clean the pan.
5. Dry the inside of the pan thoroughly with a cloth and leave the lid open before leaving the pan for long
periods (e.g. overnight). Do not use the integrated heating for drying.
6. Use commercially available cleaning agents without chlorides.

Cleaning the interior of the pan
1. Clean the pan, particularly in the corners and edges.
2. Remove any food residues and layers of fat, starch and protein.
3. To remove more stubborn limescale or colouration, bring diluted vinegar to the boil.
4. Then drain the diluted vinegar and rinse the pan with clear water.
Cleaning the exterior of the pan
1. Only clean the exterior of the pan when the pan is lowered.
2. Clean the exterior side of the pan with a soft sponge.
3. When cleaning, make sure that you only pour the water into the unit from above.
