It is a numerical value (minutes) that parameterizes the time required
to destroy a known number of reference pathogenic bacteria (pas-
teurization) or spores (sterilization), at a determining temperature.
The nal F

value is the result of a combination of times and tem-
peratures that occur inside the container (at the coldest point) during
the heat treatment. A certain F

value (sterilization or pasteurization
value) can be reached with different combinations of times and tem-
peratures (Table 1 Sterilization, Table 2 and Table 3 Pasteurization).
A higher temperature requires less time and vice versa, to obtain the
same degree of sterilization or pasteurization (F

) as the case may be.
