17. Install the front drip tray and the splash shield.

Sanitizing
1. Prepare a pail of an approved 100 ppm sanitizing
solution (examples: 2-1/2 gal. [9.5 L] of Kay-5
®
or 2
gal. [7.6 L] of Stera-Sheen
®
). Use warm water and
follow the manufacturer’s specifications.
Note: Make sure your hands are clean and sanitized
before continuing these instructions.
2. Lay the feed tube in the bottom of the mix hopper.

3. Pour the sanitizing solution into the mix hopper and
allow it to flow into the freezing cylinder.

4. While the solution is flowing into the freezing cylinder,
take particular care to brush-clean the mix hopper.
While cleaning the mix hopper, make sure to brush
the mix-level sensing probe on the rear wall of the
hopper.
