Hardness1isthepeakloadoftherstcompressioncycle.
Hardness2 is the peak load of the second compression cycle.
Cohesiveness is the ratio of A2/A1. A2 is the area under the compression stoke of the second cycle
andA1istheareaunderthecompressionstokeoftherstcycle.Ifthestructureofthesampleis
completelydestroyedontherstcompression,thisratioiszero.Ifthesampleisperfectlyelasticand
notdamagedatallbytherstcompressionthisratiois1.0Mostfoodproductswillfallsomewhere
in between 0 and 1.
Springiness is a measure of how far the sample returns after being compressed to the target deformation.
Adhesiveness is a measure of stickiness and is calculated as the area under the negative peak as
probewithdrawsaftertherstcompression.
TENSION TEST – this test can be used to pull apart a sample, usually using grip xtures to
apply tension load on the sample.
