Cajun Seafood Balls
Serves 6-8
Ingredients
½ cup prepared tartar sauce
1 tablespoons Cajun spice mix
2 eggs, beaten, separate
¼ bread crumbs, dried
1 cup cooked white rice, leftover is fine
1 7oz. can corn, whole kernel, drained
1 6oz. can salmon
1 6oz. can crabmeat
½ pound shrimp, cleaned and peeled
1 tablespoon grainy mustard
2 tablespoons dried parsley
Oil for frying
Preparation
1.! Pulse the shrimp in a food processor until finely chopped.
2.! Transfer the shrimp to a large mixing bowl.
3.! Add all the remaining ingredients except one of the beaten eggs and fold together gently
but thoroughly.
4.! Roll mixture into the 1 ½ inch balls, dip into the beaten egg and then dredge in the
breadcrumbs then place on a parchment paper lined baking sheet.
5.! Spray balls with oil and place in air fryer basket, 6 in a batch; close basket.
6.! Set temperature for 400 degrees, and timer for 5 minutes.
7.! When cook time is complete, open basket, turn balls and spray with oil; close basket.
8.! Cook for 3 minutes longer.
9.! When cook time is complete, open basket and remove seafood balls to a platter and keep
warm
10.!Serve with lemon wedges and more tartar or remoulade sauce for dipping.
