OIL LEVEL
Ensure the drain valve is closed. Fill the
cooking well with 70# of oil to the cold oil fill
line. When the oil is at the set temperature,
the oil should be at the hot oil line.
Be sure HOT OIL is at HOT
OIL level before starting a
cooking cycle.
There are 3 probe guards. The hot oil level
is the same on all three.
FOOD AND CONDIMENTS
Make sure the food you purchase is high
quality. For best results, chicken should be
fresh, trimmed for portion control and uni-
form in size.

ES24G LIGHTING INSTRUCTIONS
The manual gas shut-off valve is located at
the back of the fryer.
Start Up:
1. Open manual gas shut-off valve.
2. Turn power switch ON.
3. Check OIL LEVEL if low, add oil to
bring up to cold oil level.
