Function Description
The EKF 523 NT UD is an electric oven designed for professional use in institutional and professional kitchens, specifically for cooking food. Its primary function is to facilitate various types of baking for pastries, baked goods, and food (both fresh and frozen), reconditioning chilled and frozen food, and steam cooking meats, fish, and vegetables. The appliance is intended for use by skilled personnel trained in its proper operation and must be supervised during use.

- Power Supply: Requires an effective earthing connection. A protective pole switch (overvoltage category III, 4000V) sized for the load and complying with regulations (automatic circuit breaker) must be installed for permanent connection. The power supply voltage should not deviate from the rated value by more than ±10%.
- Water Supply: Must be supplied with drinking water at a maximum temperature of 30°C and pressure between 100 and 200 kPa (1.0 - 2.0 bar). A pressure reducer is required if mains pressure exceeds 2.0 bar, and a pump if it's below 1.0 bar. Softened drinking water with hardness between 0.5°f and 3°f is mandatory, requiring a softener to prevent limescale.
- Water Drain: A 30 mm internal diameter (DN 16) pipe, resistant to steam temperatures (90°C-100°C), must be connected to the appliance's drain pipe. The piping should be rigid, without bottlenecks, maintain a steady slope (min. 4-5%), and not exceed 1.5 meters in length. Connection to the grey water network must include an adequate trap.
- Steam Drain: Equipped with a special metal pipe (DN30) for steam discharge; no other pipe type should be connected.
- Noise Level: Less than 70 dB (A) during operation.
- Maximum Working Height: 160 cm from the floor (highest surface level).
- Storage Temperature: If stored in a warehouse, ambient temperature must not drop below 0°C. Before use, the appliance must be brought to at least +10°C.
Usage Features
- Touch Screen Control: Operated by touching icons with clean, dry fingers.
- Stand-by Mode: Automatically activates after 10 minutes of inactivity, displaying the current time. Can be manually activated/deactivated.
- Cooking Parameters Screen: Allows setting of cooking phases (1 to 5), cooking time, core probe temperature, cooking temperature, humidity percentage, and fan speed.
- Preheating Setting: Allows setting a temperature increase (0-270°C) relative to the cooking temperature. An acoustic signal indicates when the preheating temperature is reached.
- Cooking Time: Can be set from 1 minute to 11 hours and 59 minutes, or "INFINITE" time.
- Cooking Temperature: Adjustable from 30°C to 270°C (86°F to 518°F).
- Core Temperature: Adjustable from 01°C to 99°C (33°F to 210°F). When cooking with a core probe, cooking time is no longer a control parameter. The probe must be inserted into the thickest part of the food, avoiding bones, and connected to the oven's socket.
- Humidity Setting: Adjustable from off to 100% in 10% steps.
- Fan Speed Setting: Two fan speeds are available.
- Delayed Start Setting: Can be set for a maximum of 23 hours and 59 minutes. A countdown is displayed before the cooking cycle begins.
- Starting/Stopping Cooking Cycle: Started by touching a confirm symbol. Interrupted by touching any screen area and holding a stop symbol for 3 seconds. An acoustic warning sounds for 1 minute at the end of a cycle.
- Cooking Screen: Displays current phase, remaining time/core probe temperature, actual/set cooking temperature, set humidity, and selected fan speed. Parameter values can be changed during an active cooking cycle.
- Recipe Book: Stores up to 100 recipes (60 user, 40 Cloud). Recipes can be saved, deleted, imported, and exported via USB stick.
- Cooling Function: Activates by opening the oven door, displaying the real-time internal temperature. Deactivates automatically when the chamber temperature falls to 40°C.
- Settings Menu: Includes Date and Time, Units of Measurement (°C/°F), Information menu (FW version, calibration set), Screen theme (dark/light), Import/Export, and HACCP function.
- HACCP Function: Records operational data of cooking cycles onto a connected USB stick, monitoring performance. Data is stored in files identified by the cooking event date and can be displayed on a PC.
- Wi-Fi Network Connection: Allows connection to a Wi-Fi network for "EkaCloud" service (paid service). The oven generates its own Wi-Fi network for initial setup.
Maintenance Features
- Periodic Checks: Recommended at least once a year to extend service life and ensure proper operation.
- Qualified Personnel: All maintenance operations must be performed by highly qualified personnel authorized by Tecnoeka.
- Safety Precautions: Disconnect power supply and water supply, and allow the appliance to cool completely before any maintenance or cleaning.
- Component Access: Components requiring maintenance are accessible by removing the left side and back panels. Control protection box (on door) can be removed to access display TFT and led bar.
- Safety Thermal Devices: Equipped with a manually reset safety thermostat to protect against overheating. If activated, power supply is cut off. Reactivation must be done by a service technician after eliminating the anomaly.
- Cooking Chamber Gasket Replacement: Gasket has a rigid profile with retaining fins. To replace, remove the old gasket by pulling near the corners, clean the seat, and insert the new gasket (wetting with soapy water can facilitate assembly).
- Manual Cooking Chamber Cleaning: Recommended daily. Remove side grilles. Use specific degreaser for stainless steel (avoiding abrasive or corrosive acids/chlorine). Alternatively, use warm soapy water or warm water with a little vinegar. Rinse thoroughly and dry. Leave door slightly open after cleaning.
- Semi-automatic Cooking Chamber Cleaning: Spray degreaser on internal walls, side grilles, fan covers (not directly on fans), and internal door glass. Let act for 20 minutes with door closed. Run a 100% steam cycle at 100-120°C for 15 minutes. After cooling, rinse with water and dry with a heating cycle at 180-200°C for 10 minutes.
- Fan Cleaning: Regularly clean with appropriate descaling products. Remove fan cover for access.
- Door Gasket Cleaning: Recommended daily. Wash with warm soapy water, rinse, and dry with a soft cloth. Remove scaling/food residues carefully without sharp metal tools.
- Door Cleaning: Internal glass can be cleaned with degreaser or non-toxic glass cleaner. External glass with common glass detergent or warm soapy water. Dry well. Opaque spots between glass panes are inspectable and can be removed.
- External Casing Cleaning: Clean outer steel surfaces with a cloth soaked in warm soapy water or water with a little vinegar. Rinse and dry well. Avoid acid corrosive substances on supporting counter or floor.
- Inactivity Period: Disconnect from power and water supply. Clean internally and externally, paying attention to salt residues. Protect with oil-based spray products (e.g., Vaseline oil). Leave door ajar and cover to protect from dust.
