The fats present in the ice cream mixtures are ideal fields for
the proliferation of bacterial loads and mould. To eliminate this
serious problem, all the parts which come into contact with the
product must be thoroughly washed and sanitized by careful
procedures and using suitable sanitizing products.
The stainless and plastic materials used on our machines, in fact, comply
with the strictest international provisions and their special shape facilitates
their washing. However this is not enough to prevent the formation of
mould and bacteria caused by insufficient or incorrect cleaning.
The manufacturer recommends thoroughly washing and sanitizing the
parts in direct contact with the product after each work shift and in
compliance with hygienic standards in force in the country where the
machine is installed. Cleaning and sanitation operations are regulated
by specific regulations in force in the country where the machine is
installed, which must be scrupulously followed. In case of doubt,
please contact your local authorities.
Do not wash the machine with high-pressure water jets. Using
water jets for cleaning may cause electrocution for the operator
and damage to the machine.
Never use any type of solvents and/or thinners to preserve the
plastic parts and gaskets during washing.
- Chemical sanitizing products must be used in compliance with
standards in force and with the utmost caution.
- During sanitizing operations, do not touch parts with tissues,
sponges, rags or any other material.
1 CLEANING
The washing must be carried out in compliance with the health and safety
regulations in force in the country where the machine is installed. In case of
doubt, please contact the local authorities on the matter.
1.1 Pre-washing
Wash your hands well and/or wear disposable gloves.
Turn off the machine as indicated in chapter III/3.7.
Remove the removable tank from the
machine and empty it of its conteint.
Wash the removable tank (fig.IV/01).
Fill the removable tank with warm drinking
water (approx.. 40-45°C) (fig.IV/02).
Reinsert the removable tank in the machine,
immerse the suction tube in the warm water
(fig.IV/03).
Place a container of adequate capacity under the nozzle.
Press and release the WASH button to access the wash menu, the panel
will display Aut (automatic wash). Press the WASHING button to select the
MAN (manual) program. Confirm the selection by pressing the OK button.
The LEDs will turn off and the display will show MAN flashing.
Activate washing by pressing and holding down the START button.
Washing can be interrupted at any time by pressing the ON-OFF
key, the washing counter is not reset in this case. The machine
switches to OFF.
1.2 Sanitizing removable parts
Before carrying out the operations described below, disconnect
the power supply of the machine, making sure that it can be
restored only with the consent of the personnel working on the
machine.
Once the prewash cycle has been completed, it is necessary to proceed
with the disassembly of all moving parts in contact with the product and their
subsequent sanification in a separate washing tub.
Some parts have sharp corners and edges. Use extreme
caution to avoid injury and wear disposable protective gloves if
necessary.
When disassembling the moving parts, special care must be
taken to avoid shocks and/or falls that could damage them and
compromise the operation of the machine, cause serious injury
and/or property damage.
Some parts are very small; be very careful to avoid losing them
during cleaning operations.
Preparation of cleaning tub
Wash your hands well and/or wear disposable gloves.
Fill a clean tub with a sufficient amount of
drinking water at approximately 50°C (122°
F) and the sanitizer. (fig.IV/04).
It is recommended to use only the
sanitizers approved by Frigomat.
The use of different sanitizers can compromise the
effectiveness of the sanitization and the integrity of the
components. The manufacturer shall not be held liable for personal
harm and/or damage to objects deriving from the non-observance of
these indications.
Respect the indicated dilution (2%). Lower dilution percentages
(< 2%) could render sanitization ineffective; higher dilution
percentages (>2%) are useless for a better sanitization but could
represent a risk to health, to the integrity of the components
and to the environment.
Sanitizing solutions are potentially dangerous substances and
must be handled with care. Do not ingest. If swallowed or if you
feel unwell, seek medical advice immediately (show the sanitizer
label where possible).
Sanitizer in contact with skin and eyes may cause damage; use
specific protection (e.g. disposable gloves, etc.).
If case of contact with skin or eyes, wash immediately with plenty of
fresh water and seek medical advice immediately (show the sanitizer
label where possible).
Never transfer the sanitizing solution into containers other than
the original ones that do not have a safety identification plate.

Prepare the supplied brush and the OR
disassembly tool and immerse them in the
sanitizing solution (fig.IV/05)
Remove and cleaning of the cover
Remove the cover.
Emerge the cover into the tub with the
sanitizer and brush the surfaces with care.
