Commissioning, functional description
In order to ensure reliable processes for Freezing, Storage, Thawing, Proving and Holding
the cabinet must be furnished with controls to regulate the air temperature, ventilation and
relative humidity.
The operating modes of Storage, Thawing, Proving and Holding can be connected up
manually.
This means that the unit can also be used as a normal refrigerator or freezer in a storage
program with a constant temperature. With the thawing and proving operating modes, the
relative humidity is instead kept constant while the temperature varies.
Correct programming of the controls establishes the desired combination of the operating
modes:
time-controlled freezing with subsequent storage for an arbitrary length of time
time-controlled freezing with subsequent storage and time-controlled thawing as well
as subsequent maintenance of the climate upon conclusion of the thawing program
complete program with freezing, storage, thawing and proving until being taken out or
holding when the roux time is exceeded.
