Crostini with Mozzarella
1 lg.tomato,seeded and finely
chopped (about 1 cup)
1 cup shredded Mozzarella cheese ( 4 oz.)
1 tablespoon olive oil
1 teaspoon minced fresh basil
1
/4 teaspoon balsamic or red wine vinegar
1
/8 teaspoon salt
1
/8 teaspoon pepper
12 slices French bread,
1
/2 inch thick
Combine all ingredients, except bread,
and mix well. Spread mixture on bread
slices and place on rack. Cover with
upper rack and bake according to guide-
lines until crisp. Serve immediately.

10 water chestnuts,cut in half
5 chicken livers,cut in quarters or
pineapple pieces

/4 cup soy sauce
2 tablespoons brown sugar
Wrap a water chestnut and a chicken
liver or pineapple piece in each piece of
bacon; secure with a toothpick. Marinate
in soy sauce and brown sugar for 2-4
hours; drain and place on rack.Broil
according to guidelines until bacon is
crisp.
