Peanut Butter Meringues
1 egg white
1
⁄2 cup of crunchy peanut butter
1
⁄3 cup sugar
1
⁄4 teaspoon almond extract
Beat egg white until stiff; fold in peanut
butter, sugar and almond extract. Drop
by teaspoonfuls onto greased foil
wrapped rack.
Bake according to guidelines until lightly
browned. Let stand 8-10 minutes before
removing from rack.
Note: Meringues will puff as they bake
and then fall a little.
