You can make arancini balls with any remaining mixture. Allow risotto to cool. Then scoop into balls,
pushing a small piece of mozzarella into the centre if desired. Coat the balls in plain our, beaten
egg and fresh white breadcrumbs. Shallow fry in hot oil until crisp and golden. Serve with garlic aioli.
