11.2 Making yoghurt
(Yogurt)
The yoghurt program Yogurt43 allows
you to make yoghurt yourself. To do this, you
require yoghurt cultures or fresh yoghurt and
milk. All commercially available milk varie-
ties (raw milk, pasteurised fresh milk, long-
life milk and UHT milk) are suitable.
Raw milk always needs to be pasteurised in
an initial step.
For pasteurised fresh milk, long-life milk and
UHT milk, this step is not necessary.
For the actual yoghurt production, yoghurt
cultures / a little fresh yoghurt is added. The
actual yoghurt production then takes place
at moderate warmth.
NOTES:
For 1 litre of milk, add 200 g of fresh
yoghurt (with live cultures).
If you use yoghurt cultures, see the infor-
mation from the manufacturer for quanti-
ties.
Use milk that is as fresh as possible,
which you have freshly opened, and en-
sure that all kitchen utensils you use
have been thoroughly cleaned.
Special features of this program
- The default setting More51 is intended
for pasteurising milk. This selection also
selects a different temperature.
- The default setting for the preparation
time Normal51 is 8 hours, and can be
adjusted in increments of 30minutes.
The temperature is ideal for making yo-
ghurt. The time can be adjusted de-

tures.
- This program works without pressure.
The pressure valve1 must be open
