Traditionally with core probe cooking
it was always important to position the
probe in the very centre of the food.
The probe had always to be positioned
from the top downwards at the centre
of gravity of the food to cook and be
fully inserted. This new series of “Heart”
combination ovens is equipped with
a multipoint core probe. This probe
measures the temperature at several
points in the food and thus ensures the
exact temperature at its core, even if
the tip of the probe is not exactly in the
centre.
It is also recommended to insert the
probe with the food at the centre of the
oven.
Advantages of core probe cooking
Improves control over the cooking
process, eliminating the risk of loss and
waste;
• Permits accurate cooking irrespective of
the quality or size of the product;
Saves time because cooking control is
automatic;
Guarantees strict hygiene because,
with precision monitoring of the core
temperature, there is no need for food to
be handled, poked or pierced;
Ideal for large items of food;
Cooking precision to one degree
centigrade for delicate foods such as:
Roast beef;
HACCP requirements always respected.
A needle probe is available on request
for monitoring the temperature of
vacuum-packed or small-sized products;
this probe likewise is plugged into the
front panel, with no special adaptation
required.
