Basket deep frying mode
Temperature: 30°C - 180°C
Additional function: Use of the core probe to boost heating
Step Operation Note / Safety

Preconditions
Lid must be detected in the up position
Lid must be unlocked: (Pressure units)
Pan must be detected in the down position
The heating is turned off if the angle of the
pan is > 12°
Pan valve closes* if detected open

Preheating / Regulation
Regulation via pan or core probe thermocouple
If T° Core probe > 120°C then control via core probe.
(L: B12 / R: B13). Temp. Max for heating zones is 280°C!
If T° Core probe < 120°C then control via pan thermocouple.
(L: B1 / R: B2) Temp. Max for heating zones is 250°C!
The heating is turned off if the angle of the
pan is > 12°

Descent of basket (AutoLift)
The basket can descend as soon as the cooking parameters are vali-
dated. Independently of the chosen temperature.
The user must validate the descent of the
basket

Raise basket
Once the cooking time is reached or target T° at the core probe is
reached (L: B12 / R: B13).
Automatic raising of the basket

General safety in fryer mode
Filling the pan (VarioDose) like the opening the pan valve is switched
off upon rst applying heat in this mode.
These functions will be available again only
after a complete tipping of the pan.
In addition to the soft safety a thermostat
130°C (L: F25 / R: F26) prevents the power to
the supply solenoid valve if the pan tempera-
ture is > 130°C
After frying mode is used, the choice of a different cooking mode or the opening of the drain valve will only be possible after
completely tipping the pan.
* Only on devices equipped with a motorised pan valve.
