  Grease fires or frequent flare-ups in your Pit Boss Smokers can occur if you are grilling fatty meats, cooking at too high a temperature, or spraying water on gas flames. Grill fatty meats when the cooking surface is cold, and the knobs are on the “LOW” setting. Attempt cooking at a lower temperature, keeping it under 176°C / 350°F when cooking highly greasy food. Never spray water on gas flames.
