7.2.7 Position of the back plates
The distance should approximately 3/4 inch (19,05 mm) for 6 pound (2,721 kg) bird
and approximately 1 1/4 inch (31 mm) for a 4 pound (1,80 kg) bird.
The position of the back plates does normally not need to be changed for different
growers.

If the back plates are out to far the
knife will drill in the back of the birds
what can cause attached vents and
many vents can be pulled of the
intestine.
If the back plates are not cut out far
enough the bursa of fabricius won´t be
cut out (bursa).
