container until thick and lemon-colored.
Stir a small amouni ol the hol cheese

Belurn lhe
yolk
mixtureto thesaucepan
and blend. usino a mixer,
beal the egg whitesand
cream oi lariar in a mixinq
bowl until stiff but not d ry,
just
unlit
whites no lonoer slip when
bowl is lilted. Gently lold the
yolk
mixture inio the whites.
Pourthe eqg mixture lnto
the
prepared
baking dish. HoldinO
a spoon upriqht, make a
ring
1 inch deep and 1 inch from the
side o, the dish. Bake the soirfflb in
a
preheated
350"F. oven 35-40 minutes or until
putly
and delicately brownedi souflle
