If sharpening stones are worn, replace stones.
Replacement parts are supplied by Bizerba customer services.
When replacing, do not confuse sharpening and honing stones.
8.6.2 Preparation for sharpening
On the operating panel press <Clean> , see chapter 5.10.
Remove components and clean machine, see chapters 8.2 to 8.5.
Tilt the carriage back in and screw into place.
Put paper felt (from the accessory kit) into the carriage.
Switch on machine.
Enter slice thickness of 3 mm.
Press key <Slicing Start/Stop>.
Cut off a few strips of the paper felt to remove the remaining oil on the blade.
Switch off the machine, remove paper felt.
Swing the deflector into a horizontal position.
Switch on machine.
On the operating panel press <Sharpen> , see chapter 5.9.
The slice thickness opens completely.

Handwheel marking must be set to "0".
Hook the top of the device into the bolt
on the guard ring and move onto the
gauge plate.
