The filter holder is then cleaned again, this time on the edges, to remove excess
dust. Without this step, the finished coffee powder on the sides of the filter holder
will burn out during the extraction process, bringing unpleasant hints to the drink.
Not only: this excess dust also risks ruining the rubber seals inside the machine.
6. CLEANING THE SPOUTS
After cleaning the edges of the filter holder, go to the spouts, the two perforated
ends from which the drink comes out. These must always be cleaned before each
new extraction, just like all the other tools used during the process.

HE EXTRACTION
The portafilter is then hooked up and, finally, the drink is extracted in a time frame
of between 20 and 30 seconds, according to the parameters established by Scae
(Specialty Coffee Association of Europe).
