12.4 How to pour the cream in a cup
1. Begin to gently pour the freshly fitted milk into the centre of the cup, making
sure that the cream remains compact.
2. When the milk and coffee are well mixed and the cup is half full, increase the
speed of the hand by bringing the milk jug close to the cup and increasing
the dosage angle.
3. Bring the milk to the edge of the cup, keeping it close to the surface of the
drink.
4. To create a decorative effect, continue pouring the milk by moving the spout
towards the centre in small steps and ending with a longer step.
