7 Finishing
Finishing allows you to separate food production and service, giving you more flexibility to spend time on
important things like planning, menu design, or creative plating. Finishing minimizes loss of quality caused by long
holding periods, so your food always comes out tasting great.

You can Finish exactly as much food as you currently need, so you can respond easily to changing guest
numbers.

Temperatures between the boiling temperature of water and 284°F are ideal for Finishing. Within this range, food
does not dry out, but moisture does not condense on the plates.
