Raw minced salmon and monkfish
Put the chives in the Mini Bowl and pulse twice. Set aside.
Do the same with the onions, pulsing 3 times. Set aside.
Halve the pepper, discard the seeds and pith.
Cut the peppers into chunks, put in the bowl with the metal blade and pulse 4
times.
Set aside.
Chop the fish into large chunks and put in the bowl with the metal blade.
Pulse 4 times.
Place a mound of minced fish in the middle of each plate. Sprinkle with olive oil
and lemon juice. Season with pepper.
Surround the fish with tiny heaps of capers, onion, pepper and chives.
Serve immediately with toast.
Just before serving, you can place an egg yolk in half an eggshell, which can
then be placed in the middle of the fish.
