Windshield defog is operated by selecting :

Mixed Bleed Air Circuit :
Air is distributed to the windshields and cockpit side windows at a fixed temperature regardless
of TEMP selector settings.
Cold Air Circuit :
Inhibited when DEFOG is selected.
FANS will continue to operate if selected to 1 or more for air circulation.
