What causes the GILES Fryer high limit safety to trip before reaching setpoint?

If the high-limit safety trips on your GILES Fryer before reaching the setpoint, with the POWER light on, HEAT switch in the HEAT position, amber HEAT light on, controller HEAT indicator on, and the control panel red HI-LIMIT light on, it could be due to a failed Hi-Limit thermostat, a misaligned Hi-limit probe that's too close to the heating element, a power line spike causing a false hi-limit trip, or cold oil causing a false Hi-Limit during initial heating. For a failed thermostat, misaligned probe, or power line spike, you should call for service. Continuously stirring while heating cold oil will help prevent the issue.
