3.3 MODES AND TESTS
This section describes the One-Minute Water Activity Mode and additional test types
available with a monthly subscription. For more information or to upgrade an AQUALAB3 to
be able to use the One-Minute Water Activity mode or additioanl tests, please go to
metergroup.com/skala-upgrade or contact Customer Support.
3.3.1 ONEMINUTE WATER ACTIVITY MODE
With a monthly subscription, AQUALAB3 will run in One-Minute Water Activity mode on the
fourth and subsequent readings of that product. The One-Minute Water Activity mode uses
a proprietary algorithm that predicts the final water activity based on product specific data
collected and stored in SKALA. In most cases, this reading will complete in 1 min.
A product must be properly set up, including having correct target limits defined, within
the SKALA Mobile app to generate a one-minute water activity reading. Three consecutive
readings must be taken for a new product before the one-minute water activity mode is
activated. Once the first three readings have been taken, all following readings for that
product will be in one-minute mode. One-Minute Water Activity readings cannot be taken
when operating offline. Review Section2.3, Section2.4, and Section2.5 for instructions on
how to set up products, batches, and take water activity readings.
3.3.2 TOTAL MOISTURE
Traditionally, companies are used to just getting half of the moisture picture by only
measuring moisture content. Measuring and knowing just moisture content gives yield
and some vague quality data. By also knowing moisture energy (water activity) product high-
resolution quality and safety information, such as how it relates to lipid oxidation, browning,
caking, and clumping, will be available. Knowing the water activity, not the moisture content,
allows the user to pinpoint the difference between crisp and stale.
