SIZES OF CUT
Microcut heads will produce the smallest
particle size. Size of cut is determined by the
number, spacing and angle of blades in the mi-
crocut head and the speed and type of im-
peller. Several types of impeller and a wide
range of microcut heads enable the Model
1700 to produce a variety of particle sizes.The
depth of cut listed in the chart on page 123 will
give a general indication of the particle sizes
that can be produced. Other factors such as
hardness of the product will affect size of cut.

head, impeller and impeller speed combination
best suited to a particular application. See
pages 117 thru 118 for a complete list of mi-
crocut heads. Impellers are listed with feed as-
semblies on pages 92 thru 107.
IMPELLERS
Several different impellers are available for
use with microcut heads (Figure 18).The Uni-
cut impeller may be used for dry products or for
liquids or pastes that contain solids to be cut
and uniformly mixed with liquid or paste.This
impeller produces the most uniform particle
size. The Veri-cut impeller is used to finish
peanut butter and to process fruit puree, or-
ange products, candy rework and similar prod-
ucts.The Liquid Products impeller will process
a variety of tomato product, fruit concentrate,
chocolate coatings and similar products.
