OPERATING PRINCIPLE
The impeller moves product past the knife
edges producing a slice at each knife location
(Figure 19).Satisfactory slicing is obtained with
product that will cut cleanly without excessive
fracture, shattering or adherence.
DESCRIPTION
The slicing head is a ring of eleven station-
ary slicing knives held in place by adjustable
knife holders (Figure 20). See page 50 for ad-
ditional information.
SIZES OF CUT
Slice thickness is adjustable from .020 to
.060". See page 52.
IMPELLERS
Four impellers are available for use with slic-
ing heads.The impellers have different num-
bers of blades and/or blade angles to accom-
modate various input product sizes.
