UPPER AND LOWER FIN
FISHER
The upper and lower fin fishers
(fig. 13, in yellow) catch the
pectoral fins and ensure that the
collar bone moves on the
correct side of the plates.
PLATES
Plates (fig. 14, in yellow) direct
the collar bone of the fish to the
correct side of the knives. They
are pressed together with the
plates system controlled with
compressed air. The plates
settings are explained in chapter
‘Installation and Finishing,
Plates Adjustments’
