5-02. Cooking Procedures
1. Set the cooking oil temperature to a desired
setpoint; see Section 5-01.3, Manually Setting
the Cooking Temperature, or select a desired
Menu Item preset; see Section 5-01.5.1,
Selecting a Menu Preset.
For the EOF-20 Fryer unit, the cooking temp
must be set manually.
2. Ensure that the Power Switch
① is in the OFF
position.
3. Ensure that the Heat Switch
② is in the OFF
position.

This section describes procedures for cooking product on the EOF Series Fryers. Procedures presented assume
beginning with a clean empty Fryer.

4. Be sure Drain Valve Handle
③ is pushed in and
locked in the CLOSED position (tab on Handle is
through panel opening and tucked securely
behind).
5. Fill the Fry Vat with liquid frying shortening. Fill only
to the ADD mark
④ at this time to allow for
expansion as oil is heated to cooking temperature.
