1.4 Tips And Useful Information
MAKE SURE the safety tags and stickers remain firmly affixed to the machine and that they are legible. Be
careful that they do not become blurred or damaged while cleaning the machine. If the tags and stickers become
damaged or are lost, request replacements from your authorized dealer.

DESCRIPTION, FEATURES AND USE
Thank you for the confidence you’ve demonstrated in Talsa by purchasing one of our products. You won’t be disappointed. The cutter
that you’ve acquired is the culmination of Talsa’s decades of experience manufacturing food processing machinery. The cutter’s design
incorporates advanced technologies; it is constructed of top quality materials and components; and we’ve assembled it with meticulous
attention to detail. Your Talsa cutter will provide years of reliable service, highly versatile use and excellent results no matter the
application.
Talsa cutters:
Meet the strictest European safety and
hygiene standards.
Have several features which make it
suitable for use not only as an all-purpose
cutter for a wide variety of food products,
but also as an emulsifier to produce fine,
delicate dough.
Can chop and mix (bi-directionally) to
perfection any type of meat mixture (for
cold-cuts, sausages, frankfurters, pâtés,
etc.) or other food products such as
onions, potatoes, carrots, lettuce, etc. The
appearance of the final product is
enhanced since the dough is never
crushed, bruised, or drained.
Incorporate a digital thermometer that
constantly monitors the temperature of
the knives rotation area (IMG. 1).
Are equipped with two high-powered,
ventilated motors that guarantee years of
trouble-free operation regardless of the
temperature or consistency of the
mixture.
Use an electronic frequency converter
that allows a wide range of cutting speeds
between 1,000 and 4,000 rpm. Moreover,
the frequency converter protects the
cutting head motor from overloads.
Have four preprogrammed cutting speeds
(1,000, 2,000, 3,000 and 4,000 rpm) for
simpler operation. The standard mixing
speed of 100 rpm (in both directions)
allows for more homogeneous blending.
Can adapt the cutting/chopping process
to specific needs since the cutting head
and bowl operate separately (speed).
Use thermal relays to protect the bowl’s
motor from overheating.
Have a sealed chassis bottom to prevent
the entry of water, dust or debris.
Feature a removable, one piece cutting
head for easy replacement and cleaning
(IMG. 2). The six-knife grouping is
capable of up to 24,000 cuts per minute,
allowing for perfectly homogeneous
blending. The consistency of the dough
will vary depending on how long it is
processed.
Include a watertight control panel with
membrane push buttons (IMG. 3) and a
sealed electric box (IMG. 4) for easier
cleaning. Its modern, functional design
also greatly facilitates cleaning by
eliminating hard-to-reach corners.
Are constructed of stainless steel. The
bowl, also made of solid cast all-stainless
steel, is protected by a front safety guard.
Are supported by four anti-vibration legs
that facilitate both cleaning and
transportation.
Feature a system that effortlessly raises
or lowers the stainless steel knives lid at
the touch of a button. As a safety
measure, the knives lid cannot be raised
until the cutting head comes to a complete
stop.
Incorporate an anti-noise bowl lid (IMG. 5)
made from a single piece of transparent
plastic, that permits a clear view of the
product being processed. This lid is
equipped with a mechanism that
automatically reduces the knife speed to
1,000 rpm when the lid is opened in order
to protect the user from potentially harmful
noise. The user programmed knife speed
automatically resumes when the bowl lid is
closed.
Can be equipped with an optional
motorized unloading arm (IMG. 8) to
permit easy and fast emptying of the bowl.
