Cooking oil is extremely HOT! Always wear thermal protection, such as gloves or oven
mitts, when working near the open vat (stirring, loading/unloading, etc.).

5. After filling vat with fresh oil, manually set your desired cooking temperature as described in Section 4.01.3.
When upper display ④ returns to the “POWER FAILURE” message, press [START] key ⑩.
OPTIONAL: Fill Vat Using Bulk Fresh Oil Supply via Optional Direct Connection ‐
Except when filtering oil or using an installed oil supply option,
always keep the OIL RETURN VALVE ⑧ in the lower cabinet set in
the [CLOSE] position. Leaving valve in the [FILL POT] position, will possibly allow oil
to siphon back into the filter pan from cook vat, which can cause a LOW OIL LEVEL
alarm, which will result in shutdown of heating elements, as safeguard against
possible oil fire.

Ensure that Bulk Fresh Oil Connection option is properly installed and connected, and that
the bulk system pump has been correctly wired into the ADD OIL pushbutton switch on
control panel.
A. Place the OIL RETURN VALVE ⑧ in [FILL POT] position (banked system ‐ ONLY unit
being filled ‐ valves of all other units must be in [CLOSE] position).
B. Press & hold [ADD OIL] pushbutton ⑨ on control panel (only one panel of a banked
system has the switch). The system’s internal pump starts and fresh oil flow from
bulk fresh supply will start. Switch must be held to continue pump operation ... hold
switch and observe oil filling the vat ... release pushbutton to stop oil flow when level
reaches the [ADD] mark in the vat.
C. Return the OIL RETURN VALVE, to the [CLOSE] position.

6. To energize heating elements, place Heat Switch ③ in the [HEAT] position; amber control panel HEAT light ⑪
and small red HEAT indicator beside the lower display ⑫ turn ON ... elements turn on and oil begins heating.
The upper display shows the PREHEAT indication and lower display shows the real‐time actual oil temperature
while oil heats to setpoint.

Best Practices recommendation: Oil in the fryer vat should be stirred occasionally as it heats. Stirring will help
prevent the formation of “cool zones” and promote even heating throughout the total volume of oil. It is also
helpful in avoiding false HI‐LIMIT alarms, especially during the initial start‐up heating of a day, when shortening
is cool and thickened.
