Fryer Operation
GBF-50 Fryer
1. If oil is cold, first heat to at least 200°F (93°C).
2. The Power Switch
must remain [ON], and the Heat
Switch
must be in the [OFF] position. For a banked
system, power switch of the main unit with filter pan
must remain [ON].
3. For banked units, this step refers to the unit with filter
pan.
Ensure filter pan & pan cover are in place. Check the
Filter Pan Hose ... it must be properly and securely
connected at the coupling. Verify that the Discharge
Hose Valve handle is in the [CLOSE] position.
4. Slowly position Drain Valve Handle to the [OPEN]position and allow oil to completely drain from vat into
filter pan, then return the drain valve handle to the [CLOSE] position.
IMPORTANT! When drain valve is opened, controller will issue a “DRAIN IS OPEN” error and sound the alarm.
Press the [ALARM] key to silence alarm. The error should be cleared when drain is reclosed.

DO NOT attempt to pump cold, congealed oil. The filter pump can clog and be damaged.
Oil should be at a minimum of 200°F (93°C) before pumping.
The following sections explain procedures for removing and disposing of waste cooking oil from the fryer.
Depending on filtering practices, types and quantities of foods regularly cooked, oil should be changed every 7 to 10
days to maintain fryer performance and food quality. Used oil must also be removed before performing a BoilOut
procedure to clean the fry vat.
There are two different procedures for performing this task, depending on fryer’s optional configuration.
A. Removing Waste Oil from Fryer Using the Oil Discharge Hose:

The next steps require that cooking oil be
drained from the vat into filter pan, exposing
the heating elements. Although fryer has safety interlocks which
disable heating elements anytime drain valve is opened, always
place Heat Switch in the [OFF] position prior to draining, as a
further safeguard. NEVER USE THE DRAIN VALVE AS AN “ON/OFF
HEATSWITCH”.
For mutiwell banked units, DO NOT drain more than one (1) vat at a time into the filter
pan! The pan has capacity to hold oil from ONLY one (1) cook vat
. Never disconnect and
attempt to remove the filter pan from unit while it contains cooking oil.
