Fryer Operation
DO NOT attempt to perform the filtering process when shortening is cold. Doing so can
cause the filter system to clog and possibly damage the pump. Oil must be heated to at
least 200°F (93°C) before it can be efficiently pumped through the system.
Always wear thermal protection, such as gloves or oven mitts, when filtering cooking oil ... fryer parts inside
the cabinet can become very HOT!

1. After cooking the preset number of loads specified by [FILTER COUNT], alarm sounds.
2A. If FORCE FILTER is OFF, display reads ALARM FILTER OIL”, press [ALARM] key to
continue. To alert operator that oil needs filtering, the alarm
occur after each subsequent load cooked as a reminder, until oil is
filtered.
2B. If FORCE FILTER is ON, display reads “ALARM MUST FILTER OIL”,
press [ALARM] key. Fryer enters FILTER MODE and is disabled from
continued operation until oil is filtered.
3. Place Heat Switch in [OFF]position. IMPORTANT! The controller must remain ON during the filtering
process ... leave power switch in ONposition.

4. Open cabinet door (on banked battery, unit with filter pan) and
disconnect the Filter Pan Hose (push in on the white slipring
while pulling hose from connector). Remove Filter Pan from
unit.
5. Remove cover from pan and verify that filter media is in place.
Standard media is a reusable stainless mesh screen (optional, one
(1) sheet of disposable filter paper). Check to be sure that the
Holddown Frame is in place and properly locked. Any residue from
previous filter cycles should be removed.
6. Evenly distribute approximately 5 ozs. of a suitable filter powder
product over the media surface. Use of a quality filter aid is
essential for removing soluble impurities and reconditioning the oil.

7. Replace cover and reposition the assembled filter pan under unit. Reconnect Filter Pan Hose
(push in white slipring while inserting brass fitting into coupling). Ensure that hose fit is
tight and secure.

The next steps require that cooking oil be drained from the vat into filter pan, exposing the
heating elements. Although fryer has safety interlocks which disable heating elements
anytime drain valve is opened, always place Heat Switch in the [OFF] position prior to draining, as a further
safeguard. NEVER USE THE DRAIN VALVE AS AN “ON/OFF HEATSWITCH”
.
For mutiwell banked units, DO NOT drain more than one (1) vat at a time into the filter
pan! The pan has capacity to hold oil from ONLY one (1) cook vat
. Never disconnect and
attempt to remove the filter pan from unit while it contains cooking oil.
