Potato gratin in a mustard sauce
Serves 4
Ingredients
800 g potatoes
1 onion, finely diced
1 clove of garlic, finely diced
30 g butter
2 tbsp coarse grained mustard
250 ml vegetable stock
1 pinch of saffron
125 ml cream
Salt
Pepper
Topping
100 g grated Cheddar cheese
Method
Peel and slice the potatoes, and parboil
in salted water for about 5 minutes.
Drain and arrange in the bottom of an
oven-proof dish (C 28 cm).
Fry the onions and garlic gently in
butter and layer with the potatoes.
Place the mustard, stock, saffron and
cream in a saucepan, and bring to the
boil. Season with salt and pepper.
Pour the sauce over the potatoes, and
sprinkle over the grated cheese. Bake
in the oven uncovered.
