ZUCCHINI BREAD
(QUICK BREAD SETTING, NOT FOR TIMER)
2 cups Shredded zucchini (about 2 – 3)
1/2 cup Vegetable oil
2 Eggs, slightly beaten
2 tsp. Vanilla
1-1/2 cups All-purpose flour
1 cup Sugar
3/4 tsp. Baking soda
1/2 tsp. Ground cinnamon
(optional)
1/2 tsp. Baking powder
1/2 cup Chopped walnuts or pecans
Measure all wet ingredients into bread pan. In a medium mixing bowl, combine dry
ingredients, stir together and add to bread pan. Select Quick Bread setting and dark
crust (H). Press Start/Stop button. About 5 minutes into mixing cycle scrape down
sides of pan, using a rubber spatula. Bread is finished when unit signals and the
display reads 0:00. Press Start/Stop button. Remove pan to heat resistant surface and
cool 10 minutes before removing from pan. Cool completely on rack before slicing
