8.6.3. POSITIVE CYCLE (+3°C) / NEGATIVE (-18°C) / DEEP NEGATIVE (-35°C)
To perform the positive/negative/deep negative cycle:

Press , or to activate the mode to be used.
Note: The equipment starts a 10" countdown at the end of which the blast chilling phase starts in temperature
mode.

To activate timed mode, press the selected mode button again during the countdown phase.
IT IS possible to change the blasting time using buttons and .
Note: In timed mode, the chamber temperature and preset blast chilling time settings correspond to the selected
cycle.

With timed mode active, press the button of the selected mode again to confirm the set time and start the blast
chilling.

Press , , , during the countdown phase to change the selection of the blast
chilling type.

Press the button to end the cycle.
The duration of the blast chilling cycle is determined by reaching the set temperature (temperature mode) or the preset time
(time mode).
During the first stages of temperature mode, the blast chiller monitors the core probe temperature.
If the core is positioned:
In its housing inside the chamber, the blast chiller switches autonomously to timed mode
Outside the chamber, the blast chiller remains in temperature mode
Inside the product, the blast chiller remains in temperature mode.
In case of false positives due to the product and/or the position of the core probe. Check the positioning of the probe, the
characteristics of the product and how it is to be blast chilled.
