This document provides operating instructions for the MKN SpaceCombi Team electric combisteamer, model TKECOD6100. It details the device's functions, technical specifications, usage, and maintenance.
Function Description
The SpaceCombi Team combisteamer is a convection steamer designed for commercial kitchens, suitable for various cooking methods including steaming, combisteaming, and convection. It can be used with suitable accessories for food preparation. The unit features a WaveClean automatic cleaning system, a 4-point core temperature sensor, and software version 2.0.
The combisteamer offers two main operating modes:
- Manual cooking (myCooking): Allows direct execution and individual adjustment of various cooking modes and equipment functions.
- Automatic cooking (autoChef): Enables the execution of saved cooking programs, with options for adjustment if needed.
Expanded cooking functions include:
- PerfectHOLD: Keeps cooked food warm between 50 °C and 100 °C until serving.
- Ready2Cook (preheating): Automatically heats or cools the cooking zone to the correct starting temperature for specific programs, such as baking.
- Start-time preselection: Allows setting a waiting period before a program starts, helping to avoid production bottlenecks.
- Steam Exhaust System (SES): Automatically extracts steam from the cooking zone shortly before cooking ends, allowing safe opening of the door. This function is standard for programs longer than 6 minutes.
- RackControl2: Ideal for rolling cooking, allowing different foods to be cooked simultaneously on various racks with individual cooking times. It monitors cooking times and signals when food is ready.
- ChefsHelp: Inserts a cooking step that provides additional information (text and images) at a specific time during the cooking process.
- FamilyMix: Displays appropriate cooking programs from the autoChef menu that share the same cooking climate and an identical or shorter cooking time.
- Manual humidification: Allows increasing cooking humidity during operation, available in Convection and Delta-T Convection modes.
- Resting time: Inserts a cooking step where heating and fan are switched off for a set period.
- QualityControl: Optimizes cooking time by automatically adjusting temperature and preheating based on loading volume.
- After-cooking button: Extends the cooking process for a predefined time after the program has elapsed.
- DynaSteam²: Matches the required steam amount to the food product volume, finely adjusting and automatically introducing steam into the cooking zone.
- Time2Serve: Enables different products to be ready at the same time by specifying a serving time. The combisteamer signals when a product's remaining cooking time is reached, allowing successive loading during an active cooking process to reduce cooking time and save resources.
- ClimaSelect plus: Optimizes the climate in the cooking zone by introducing steam in small stages and allowing individual climate control.

Usage Features
- User Interface: Intuitive touchscreen interface with dedicated buttons for "Manual cooking," "Unit functions," "Automatic cooking," "Language selection," "WaveClean," "myFavorites," and USB ports for both top and bottom units.
- Start-up: Read operating instructions before commissioning.
- Switching On/Off: Press the "On Off" button. The unit heats up quickly, making continuous operation unnecessary for energy saving.
- Door Operation: Open the cooking zone door by rotating the handle anti-clockwise or clockwise. Close by pushing the door until the latch engages.
- Loading/Emptying:
- Do not exceed maximum loading capacity.
- Use suitable trays that rest securely on support brackets.
- Always insert trays into U-rails.
- Never insert food-carrying trays with liquid above eye level.
- After emptying, remove food residues from the drain screen and leave the door slightly ajar to extend the door seal's life and prevent moisture buildup.
- Equipment Functions Menu: Access various functions and settings, including basic settings, equipment information, date/time, language selection, favorites, inhibit operation, background lighting, water filter maintenance, parameter level settings, and importing content (video, images, recipes).
- Cooking Program Creation: Users can create and manage their own cooking programs in manual cooking mode, adjusting cooking mode, temperature, and time.
- Barcode Scanner (optional): Allows selection of products and loading of cooking programs by scanning barcodes.
- USB Flash Drive: Used for importing/exporting videos, images, recipes, and software updates. Requires a formatted, non-write-protected USB drive (2-32 GB).
- VideoAssist: Displays videos with additional operational explanations.
Maintenance Features
- Cleaning Traffic Light: A "WaveClean" button in the main menu displays a cleaning traffic light (grey, yellow, orange, red) indicating the unit's pollution level and reminding the user to clean.
- WaveClean Automatic Cleaning: Cleans the cooking zone using a specific cleaning cartridge and then rinses it. Cleaning levels (medium, intensive) can be selected, with overnight cleaning recommended for sufficient drying.
- Manual Cleaning: Involves removing food remains, cleaning the drain screen, spraying cleaner, allowing it to act, and then rinsing and drying the cooking zone. Protective clothing and breathing protection are required when spraying cleaner.
- Preventing Corrosion: Keep surfaces clean, remove lime, grease, starch, protein, and salt deposits. Avoid damaging stainless steel surfaces with abrasive tools or chemicals.
- Removing Rust Spots: Remove immediately with mild abrasive or fine sandpaper, then expose treated areas to fresh air for at least 24 hours.
- Cleaning Housing: Clean with warm water and commercially available washing-up liquid.
- Cleaning Door Handle, Operating Elements, Control Panel, and Touchscreen: Use a damp cloth and commercially available detergent. Avoid abrasive cleaners. The touchscreen has a 10-second cleaning mode during which it cannot be operated.
- Cleaning Door Seal: Clean regularly with warm water and detergent, especially if the unit is used frequently for roasting.
- Removing Calcium Deposits: Spray descaler into the cooking zone, allow to act, then rinse thoroughly. Repeat if necessary.
- Hygiene Flush: Perform a hygiene flush (steaming at 100 °C for 7 minutes after 2 days of idleness, or 1 hour after 7 days) to flush water lines before using the unit after extended periods.
- Visual Inspection: Yearly inspection of housing, cooking zone door, and cooking zone for deformation and damage by a proficient operator.
- Professional Maintenance: Manufacturer recommends professional maintenance by trained technical personnel every 12 months, or every 6 months for heavier use.
- Troubleshooting: The manual provides a list of error messages, descriptions, and remedies, including emergency mode for limited operation during faults.
