CALIFORNIA SALSA

1/2 medium onion, peeled
1 jalapeño chilli, deseeded
5g coriander leaves
1 tsp lemon juice
1 tsp salt (optional)
6 ripe plum tomatoes,
cut into quarters
This recipe can be
reduced by half and made
in smaller containers.
1. Put the first five ingredients and six of the tomato
quarters into the Vitamix container in the order listed
and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 5.
4. Blend for 15–20 seconds, using the tamper to press
the ingredients into the blades.
5. Reduce the speed to Variable 3 and remove the lid
plug. Add the remaining tomatoes through the lid
plug opening.
6. Blend for a further 10 seconds, using the tamper to
press the ingredients into the blades. Do not over-mix,
leave chunky.
