BROCCOLI CHEESE SOUP
preparation: 5 minutes • processing: 5–6 minutes • makes: 480ml
240ml skimmed or
semi-skimmed milk
40g grated, low-fat
Cheddar cheese
100g fresh or frozen
broccoli or cauliflower
florets, chopped
and steamed
1 tsp diced onion
1/4 tsp chicken or
vegetable bouillon
1. Put all the ingredients into the Vitamix container in
the order listed and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
4. Blend for 5–6 minutes or until heavy steam escapes
from the vented lid.
