DOUGHNUT MUFFINS

90g plain flour
90g wholemeal flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp freshly
grated nutmeg
120ml semi-skimmed
or soya milk
1 egg or 60ml
egg substitute
80g low-fat butter spread
100g caster sugar
1. Preheat the oven to 180°C/Gas 4. Spray a 12-cup
mun tin with cooking spray or line with paper cases.
2. Mix the first five ingredients together in a medium
bowl. Set aside.
3. Put the milk, egg, butter spread and sugar into the
Vitamix container in the order listed and secure the lid.
4. Select Variable 1.
5. Turn the machine on and slowly increase the speed to
Variable 10, then to High.
6. Blend for 45 seconds.
7. Pour the wet mixture into the dry mixture and stir
until just moistened.
8. Pour into the prepared mun cups.
9. Bake for 20 minutes or until light golden brown.
Cool on wire racks.
10. Toss the muns in cinnamon sugar while still warm.
