ICING SUGAR
preparation: 5 minutes • processing: 40 seconds • makes: 240g
300g sugar
1 tbsp cornflour
1. Put the sugar into the Vitamix container and secure
the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase the speed to
Variable 10, then to High. Blend for 30 seconds.
4. Remove the lid plug. Add the cornflour through the lid
plug opening and blend for a further 10 seconds.
5. Allow the powder to settle before removing the lid.
Store in an airtight container.

Adding cornflour to icing sugar prevents the sugar from caking and
